Kale Salad with Apples

The salad

Tuscan kale leaves, stems removed, cut into ½ inch pieces

The dressing

shallot, minced

red wine vinegar

Dijon mustard

Instructions
- Whisk together all the ingredients for the dressing in a small bowl.
- Place the kale in a large bowl and pour the dressing over it.
- Massage the dressing into the kale for 3-5 minutes until tender.
- Add the diced apple, feta cheese, pecans, pomegranate arils, and bacon to the kale.
- Toss to combine and serve.
