Kale Salad with Apples

Ingredients

The salad

  • 5 cups Tuscan kale leaves, stems removed, cut into ½ inch pieces
  • 1 cup diced apple
  • ½ cup feta cheese, crumbled
  • ½ cup pecans, roughly chopped
  • ½ cup pomegranate arils
  • ½ cup bacon, cooked and crumbled

The dressing

  • 1 tablespoon shallot, minced
  • cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • to taste salt
  • to taste black pepper

Instructions

  1. Whisk together all the ingredients for the dressing in a small bowl.
  2. Place the kale in a large bowl and pour the dressing over it.
  3. Massage the dressing into the kale for 3-5 minutes until tender.
  4. Add the diced apple, feta cheese, pecans, pomegranate arils, and bacon to the kale.
  5. Toss to combine and serve.
