Kale Salad with Apple Cider Dressing

Instructions
- Combine olive oil, vinegar, mustard, honey, ginger, salt, and pepper in a large bowl.
- Remove tough stems from the kale and chop the leaves into small pieces.
- Add the kale to the dressing and massage it until softened.
- Stir in the shredded carrots and diced onions, adjusting seasoning to taste.
- Top with sliced avocado and serve immediately.
