Ingredients

The dressing

  • cup olive oil
  • ¼ cup apple cider vinegar
  • 1 clove garlic
  • Tbsp Dijon mustard
  • ¼ tsp salt
  • 10-15 cranks freshly cracked pepper

The salad

  • ½ lb chopped kale
  • 1 medium granny smith apple
  • ¼ cup raisins
  • ½ cup walnut halves

Instructions

  1. Rinse the kale under cool running water and let it drain.
  2. In a blender, combine olive oil, apple cider vinegar, Dijon mustard, garlic, salt, and pepper, and blend until smooth.
  3. Wash the apple and slice it into wedges or dice it.
  4. Chop the walnuts and ensure the kale is dry before adding it to a large bowl with the apples, walnuts, and raisins.
  5. Drizzle half of the dressing over the salad and toss to coat, adding more dressing as desired.
