Ingredients

The dressing

  • ½ cup olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp real maple syrup
  • tsp dijon mustard
  • to taste none salt and freshly ground black pepper

The salad

  • 1 lb curly kale
  • 1 large apple (9 oz., recommended gala, julienned)
  • 2 medium carrots (shredded, about 1 cup)
  • ¾ cup unsalted slivered almonds (toasted)
  • ¾ cup shredded sharp white cheddar cheese (3 oz.)
  • cup sliced red onion

Instructions

  1. Whisk together the dressing ingredients in a bowl and let it rest in the fridge.
  2. Remove kale leaves from the thick ribs, rinse, and dry them well.
  3. Thinly slice the kale into ribbons.
  4. In a large bowl, combine the kale with the apple, carrots, almonds, cheddar cheese, and red onion.
  5. Pour the dressing over the salad and toss well to coat.
  6. Serve the salad within a few hours for best results.
