unsalted slivered almonds (toasted)

shredded sharp white cheddar cheese (3 oz.)

Instructions
- Whisk together the dressing ingredients in a bowl and let it rest in the fridge.
- Remove kale leaves from the thick ribs, rinse, and dry them well.
- Thinly slice the kale into ribbons.
- In a large bowl, combine the kale with the apple, carrots, almonds, cheddar cheese, and red onion.
- Pour the dressing over the salad and toss well to coat.
- Serve the salad within a few hours for best results.
