Kale Apple Salad

Instructions
- Whisk together the dressing ingredients in a bowl or jar.
- Add the washed and chopped kale to a large bowl and drizzle with half the dressing, massaging it into the leaves for 1-2 minutes until softened.
- Add the chickpeas, apple slices, pecans, and vegan feta to the kale.
- Pour the remaining dressing over the salad, toss to combine, and serve.
