Kale Salad with Cranberries

Ingredients

  • 1 bunch organic curly kale
  • 1 whole juice of one lemon
  • 3 tablespoons good olive oil
  • 2 teaspoons raw local honey
  • 1 teaspoon salt
  • cup dried cranberries
  • to taste pine nuts or chopped walnuts (optional)

Instructions

  1. Remove the leaves of the kale from the stems and tear them into bite-sized pieces, placing them in a large bowl.
  2. Prepare the dressing by whisking together the lemon juice, olive oil, honey, and salt.
  3. Pour about half of the dressing over the kale and massage it into the leaves until they wilt slightly.
  4. Add more dressing to taste, then toss in the cranberries and nuts if using.
  5. Refrigerate until ready to serve.
