Kale Salad with Cranberries

Instructions
- Remove the leaves of the kale from the stems and tear them into bite-sized pieces, placing them in a large bowl.
- Prepare the dressing by whisking together the lemon juice, olive oil, honey, and salt.
- Pour about half of the dressing over the kale and massage it into the leaves until they wilt slightly.
- Add more dressing to taste, then toss in the cranberries and nuts if using.
- Refrigerate until ready to serve.
