BBQ Chicken Zucchini Boats

Instructions
- Preheat the oven to 350°F.
- Scoop out the seeds from the zucchini halves, leaving a ½ inch hole in the center.
- Place the zucchini in a casserole dish, flesh side up.
- In a bowl, combine the shredded chicken with BBQ sauce and mix well.
- Fill each zucchini boat with the BBQ chicken mixture.
- Sprinkle shredded Mexican cheese on top of the filled zucchini boats.
- Bake in the oven for 15 minutes, or longer if you prefer softer zucchini.
- Remove from the oven and garnish with avocado, tomatoes, green onions, and a drizzle of ranch dressing before serving.
