Ingredients

The zucchini boats

  • 3 pieces zucchini, halved (seeds removed)

The filling

  • 1 lb. boneless skinless chicken breast, cooked and shredded
  • ½ cup BBQ sauce
  • cup shredded Mexican cheese

The toppings

  • 1 piece avocado, sliced
  • ½ cup halved cherry tomatoes
  • ¼ cup diced green onions
  • 3 tablespoons ranch dressing

Instructions

  1. Preheat the oven to 350°F.
  2. Scoop out the seeds from the zucchini halves, leaving a ½ inch hole in the center.
  3. Place the zucchini in a casserole dish, flesh side up.
  4. In a bowl, combine the shredded chicken with BBQ sauce and mix well.
  5. Fill each zucchini boat with the BBQ chicken mixture.
  6. Sprinkle shredded Mexican cheese on top of the filled zucchini boats.
  7. Bake in the oven for 15 minutes, or longer if you prefer softer zucchini.
  8. Remove from the oven and garnish with avocado, tomatoes, green onions, and a drizzle of ranch dressing before serving.
