Barbecue Chicken Spaghetti Squash Boats

Ingredients

The squash and chicken

  • 1 each baked spaghetti squash, halved and de-seeded
  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

The toppings

  • 1 cup mozzarella cheese
  • ¼ cup chopped green onion
  • ¼ cup chopped red onion
  • to taste cilantro for garnish

The sauce

  • to taste BBQ Sauce

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper or foil.
  2. Brush the chicken breasts with olive oil and sprinkle with salt and pepper.
  3. Bake the chicken in the oven for about 25 minutes and let it rest once done.
  4. Prepare the spaghetti squash by removing all seeds and fluffing the strands with a fork.
  5. Once the chicken is cooled, cut it into cubes and toss in BBQ sauce.
  6. Add the BBQ chicken to the spaghetti squash boats and top with mozzarella cheese.
  7. Bake in the oven for 10 minutes or until the cheese is melted.
  8. Top with green onions and cilantro, and serve immediately.
