Barbecue Chicken Spaghetti Squash Boats

The toppings

mozzarella cheese

The sauce
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper or foil.
- Brush the chicken breasts with olive oil and sprinkle with salt and pepper.
- Bake the chicken in the oven for about 25 minutes and let it rest once done.
- Prepare the spaghetti squash by removing all seeds and fluffing the strands with a fork.
- Once the chicken is cooled, cut it into cubes and toss in BBQ sauce.
- Add the BBQ chicken to the spaghetti squash boats and top with mozzarella cheese.
- Bake in the oven for 10 minutes or until the cheese is melted.
- Top with green onions and cilantro, and serve immediately.
