BBQ Chicken Pizza Stuffed Spaghetti Squash

Ingredients

The squash

  • 1 whole spaghetti squash

The filling

  • 1 tablespoon olive oil
  • 1 cup Stubbs BBQ Sauce
  • 1 cup cubed rotisserie chicken
  • 1 cup shredded mozzarella cheese
  • ¼ cup sliced red onion

Optional garnish

  • to taste fresh basil

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Drizzle the squash with olive oil and rub it in, then place cut side down on a baking sheet.
  4. Bake for 35-40 minutes until tender.
  5. Remove from the oven and scrape the squash into strands with a fork.
  6. Preheat the oven to high broil.
  7. Top each half of the squash with BBQ sauce, mozzarella cheese, rotisserie chicken, and sliced red onion.
  8. Broil for 5-6 minutes until the cheese is melted and slightly browned.
  9. Garnish with fresh basil and serve.
