Ingredients

The squash

  • 1 whole spaghetti squash

The toppings

  • 1 tablespoon olive oil
  • 1 cup tomato basil pasta sauce
  • 1 cup shredded mozzarella cheese
  • 10–15 pieces pepperoni
  • 1–2 whole mushrooms, sliced
  • ¼ cup sliced green pepper
  • ¼ cup sliced red onion
  • to taste none fresh basil (optional, for garnish)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Drizzle with olive oil and rub it into the squash, then place cut side down on a baking sheet.
  4. Bake for 35-40 minutes until tender when poked with a fork.
  5. Remove from the oven and use a fork to scrape the squash into spaghetti strands.
  6. Preheat the oven to HIGH broiler.
  7. Top each squash half with tomato basil pasta sauce, shredded mozzarella, pepperoni, mushrooms, green pepper, and red onion.
  8. Broil for 5-6 minutes until the cheese is melted and pepperoni is crispy.
  9. Garnish with fresh basil and serve.
