Pizza-Stuffed Spaghetti Squash

Ingredients

The squash

  • 1 medium spaghetti squash

The filling

  • 2 tsp avocado or olive oil
  • 1 small onion, diced small
  • 1 small bell pepper, diced small
  • 1 medium zucchini, diced small
  • 8 ounces mushrooms, diced
  • 2 cloves garlic, minced
  • 2 tsp dried Italian seasoning
  • ½ lb ground turkey
  • 1 jar (24-ounce) Primal Kitchen Tomato Basil Marinara Sauce
  • 2 ounces pepperoni, cut into small pieces
  • 1 cup shredded mozzarella or Italian blend cheese (optional)
  • to taste fresh basil, finely sliced (optional)

Instructions

  1. Cook the spaghetti squash using your preferred method and set aside to cool.
  2. Preheat the oven to 375°F.
  3. In a skillet, heat avocado oil and sauté onions, peppers, zucchini, and mushrooms until softened.
  4. Add garlic and Italian seasoning, cooking until fragrant.
  5. Add ground turkey and cook until no longer pink and veggies are tender.
  6. Stir in the marinara sauce and combine well.
  7. Add the spaghetti squash, pepperoni, and half of the cheese (if using) to the pan and mix.
  8. Stuff the mixture back into the squash shells or place in a baking dish.
  9. Bake for 15 minutes, then sprinkle with remaining cheese and bake for an additional 5 minutes until melted.
  10. Remove from oven and garnish with fresh basil before serving.
