Ingredients

The filling

  • 1 cup whole-wheat couscous (uncooked)
  • 1/2 cup feta cheese (crumbled)
  • 1 clove garlic (minced)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt
  • to taste pepper

The tomatoes

  • 4 large tomatoes

The topping

  • 1/3 cup whole-wheat breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the couscous according to the package directions.
  3. Slice the tops off the tomatoes and scoop out the pulp, then place them in a baking dish.
  4. In a bowl, combine feta, garlic, oregano, lemon zest, salt, and pepper. Add the cooked couscous and mix well.
  5. Stuff the couscous mixture into the prepared tomatoes.
  6. In a small bowl, mix breadcrumbs with olive oil and sprinkle on top of the stuffed tomatoes.
  7. Bake for 18 to 20 minutes until golden brown.
