Ingredients

The couscous

  • cup couscous
  • cup water
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt

The mix-ins

  • cup sun-dried tomatoes in oil, drained and diced
  • cup crumbled feta cheese
  • ¼ cup chopped green onion
  • ½ cup shelled pine nuts

Instructions

  1. Toast the pine nuts in a dry, non-stick fry pan over medium-high heat for about 3-4 minutes until golden brown.
  2. In a medium saucepan, bring water to a boil, then stir in couscous, olive oil, and kosher salt.
  3. Cover the saucepan and remove it from heat, letting it stand for 5 minutes.
  4. Fluff the couscous with a fork and mix in the sun-dried tomatoes, feta cheese, chopped green onion, and toasted pine nuts.
  5. Serve warm or at room temperature.
