Easy Couscous with Sun-Dried Tomato and Feta

Instructions
- Toast the pine nuts in a dry, non-stick fry pan over medium-high heat for about 3-4 minutes until golden brown.
- In a medium saucepan, bring water to a boil, then stir in couscous, olive oil, and kosher salt.
- Cover the saucepan and remove it from heat, letting it stand for 5 minutes.
- Fluff the couscous with a fork and mix in the sun-dried tomatoes, feta cheese, chopped green onion, and toasted pine nuts.
- Serve warm or at room temperature.
