Ingredients

The skewers

  • 12 oz mini fresh Mozzarella balls
  • 1 package prosciutto
  • 4-5 pieces ripe nectarines or peaches
  • 1 bunch fresh basil leaves (optional)

Honey Basil Vinaigrette

  • cup apple cider vinegar
  • 1 clove garlic (finely minced or pressed)
  • ½ teaspoon kosher salt
  • 2 tablespoons honey
  • 1 oz fresh basil leaves
  • 1 cup olive oil or other oil of your choice

Instructions

  1. Make the Honey Basil Vinaigrette and set aside.
  2. Slice prosciutto into smaller pieces, about 1-2 inches by 2-3 inches.
  3. Cut the fruit into pieces similar in size to the cheese.
  4. Layer a piece of cheese, a folded slice of prosciutto, and a piece of fruit onto each skewer, adding fresh basil if desired.
  5. Arrange the skewers on a plate, drizzle with vinaigrette, and serve immediately.
