Southwest Quinoa Bowl with Cilantro Dressing

The Salad

Avocado, mashed

Instructions
- Cook the rinsed quinoa with water and salt in a saucepan until boiling, then reduce heat and cover for 15 minutes.
- Remove from heat and let sit for 5 minutes, then fluff with a fork and set aside to cool.
- In a mini food processor, blend the dressing ingredients until well mixed.
- Once the quinoa has cooled, mash the avocado with salt and lime juice and mix it with the quinoa in a bowl.
- Add corn, onion, black beans, and roasted red pepper to the bowl.
- Drizzle with cilantro dressing and garnish with sliced jalapeño and cotija cheese.
