Southwest Quinoa Bowl with Cilantro Dressing

Ingredients

The Quinoa

  • ½ cup Quinoa, well rinsed
  • 1 cup Water
  • 1 pinch Salt

Cilantro Dressing

  • ¼ cup Mayonnaise
  • ¾ cup Sour Cream (or Greek yogurt)
  • 1 clove Garlic
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 handful Fresh Cilantro Leaves, rinsed & chopped

The Salad

  • ½ ripe Avocado, mashed
  • 1 pinch Salt
  • 1 squeeze Lime Juice
  • ¼ cup Corn Kernels (fresh, frozen, or canned)
  • medium Red Onion, thinly sliced
  • ¼ cup Black Beans, canned, rinsed & drained
  • ½ medium Roasted Red Pepper, sliced

Garnish

  • Sliced Jalapeño
  • Cotija Cheese

Instructions

  1. Cook the rinsed quinoa with water and salt in a saucepan until boiling, then reduce heat and cover for 15 minutes.
  2. Remove from heat and let sit for 5 minutes, then fluff with a fork and set aside to cool.
  3. In a mini food processor, blend the dressing ingredients until well mixed.
  4. Once the quinoa has cooled, mash the avocado with salt and lime juice and mix it with the quinoa in a bowl.
  5. Add corn, onion, black beans, and roasted red pepper to the bowl.
  6. Drizzle with cilantro dressing and garnish with sliced jalapeño and cotija cheese.
