Creamy Vegan Cashew Cheese

Ingredients

The cheese base

  • 1 cup raw cashews
  • ½ teaspoon salt
  • 2–4 tablespoons water
  • 1–2 teaspoons apple cider vinegar

Optional seasonings

  • to taste nutritional yeast
  • ¼–½ teaspoon smoked paprika
  • to taste granulated garlic
  • to taste fresh herbs (basil, cilantro, parsley, dill, etc.)
  • to taste dried herbs (oregano, thyme, rosemary)

Instructions

  1. Soak the cashews in water for 3 to 24 hours, then drain and save the soaking water.
  2. Place the soaked cashews in a food processor with salt and apple cider vinegar.
  3. Pulse repeatedly, scraping down the sides as needed.
  4. With the motor running, add the reserved cashew water a tablespoon at a time until the desired consistency is achieved.
  5. Blend for 1-2 minutes, then taste and add any optional seasonings as desired.
