Creamy Vegan Cashew Cheese
Ingredients
The cheese base

raw cashews

apple cider vinegar
Optional seasonings

nutritional yeast

smoked paprika

fresh herbs (basil, cilantro, parsley, dill, etc.)

dried herbs (oregano, thyme, rosemary)
Instructions
- Soak the cashews in water for 3 to 24 hours, then drain and save the soaking water.
- Place the soaked cashews in a food processor with salt and apple cider vinegar.
- Pulse repeatedly, scraping down the sides as needed.
- With the motor running, add the reserved cashew water a tablespoon at a time until the desired consistency is achieved.
- Blend for 1-2 minutes, then taste and add any optional seasonings as desired.
