Ingredients

  • 1 cup raw cashews
  • 2 tablespoons water
  • 3 tablespoons plain vegan yogurt
  • 1 tablespoon lemon juice
  • ½ teaspoon sea salt

Instructions

  1. Blend all the ingredients in a high-speed blender until smooth and creamy.
  2. Transfer the mixture to a clean glass bowl or jar and smooth it down.
  3. Cover the bowl/jar with cheesecloth or a paper towel and secure with a rubber band.
  4. Place in a warm, dry place and let it sit undisturbed for 24-48 hours.
  5. After resting, stir the cream cheese to combine and refrigerate it.
  6. Taste and adjust salt if needed, and strain if you want a thinner consistency.
