Ingredients

  • 2 cups raw unsalted cashews
  • 1 tablespoon olive oil
  • 1 tablespoon chopped rosemary
  • 1 tablespoon chopped thyme
  • 1 tablespoon chopped sage
  • 3 cloves garlic, minced
  • 3 tablespoons lemon juice
  • 1 tablespoon nutritional yeast
  • ¼ cup sliced chives
  • ½ teaspoon yellow miso
  • ¼ teaspoon black pepper
  • to taste none salt
  • for coating none red pepper flakes

Instructions

  1. Soak cashews in boiling water for at least 15 minutes, then drain and rinse.
  2. In a saucepot, heat olive oil and add the herbs and garlic, cooking until aromatic.
  3. Combine all ingredients in a food processor and blend until smooth, adding water if necessary.
  4. Taste and adjust salt and lemon juice as needed.
  5. Transfer to an airtight container and refrigerate for 4-5 days.
