Instructions
- Soak cashews in boiling water for at least 15 minutes, then drain and rinse.
- In a saucepot, heat olive oil and add the herbs and garlic, cooking until aromatic.
- Combine all ingredients in a food processor and blend until smooth, adding water if necessary.
- Taste and adjust salt and lemon juice as needed.
- Transfer to an airtight container and refrigerate for 4-5 days.
