Ingredients

The base

  • 1 ½ cups raw cashews
  • ½ cup plain dairy free yogurt
  • 4 teaspoons white vinegar
  • 2 teaspoons lemon juice
  • ½ teaspoon sea salt

Optional flavor additions

  • 1 - 1 ½ cups freeze dried berries
  • ½ - 1 cup finely chopped low moisture veggies

Instructions

  1. Soak the cashews overnight, then rinse and drain them.
  2. Combine all base ingredients in a food processor.
  3. Process until creamy and smooth, scraping down the sides as needed.
  4. If adding freeze dried fruit, incorporate it at the start for a smooth texture, or later for chunks.
  5. If adding veggies, pulse them in at the end.
  6. Store the cream cheese in an airtight container in the fridge.
