Ingredients

The Salad

  • 6 cups baby spinach
  • 2 cups fresh figs, quartered
  • ½ cup goat cheese, crumbled
  • ½ cup candied pecans, chopped

The Dressing

  • cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 teaspoons shallot, minced
  • to taste salt
  • to taste black pepper

Instructions

  1. Whisk together the dressing ingredients in a small bowl until well combined.
  2. In a large bowl, combine the spinach, figs, goat cheese, and candied pecans.
  3. Drizzle the dressing over the salad and toss gently to combine.
