Ingredients

The salad

  • 10 oz baby spinach
  • 1 lb fresh strawberries, hulled and sliced
  • 5 oz feta cheese, crumbled
  • small red onion, thinly sliced

Candied pecans

  • ¾ cup broken or roughly chopped pecans
  • Tbsp brown sugar
  • ½ Tbsp butter

Balsamic vinaigrette

  • ½ cup balsamic vinegar
  • ½ cup olive oil
  • 1 Tbsp dijon mustard
  • 1 Tbsp honey
  • to taste salt and freshly ground black pepper

Instructions

  1. Prepare the vinaigrette by boiling balsamic vinegar until reduced by half, then mix with olive oil, dijon mustard, honey, salt, and pepper.
  2. For the candied pecans, cook pecans with brown sugar and butter until caramelized, then cool on a plate.
  3. In a salad bowl, toss spinach, strawberries, half of the feta, red onion, and pecans.
  4. Drizzle about ⅓ of the dressing over the salad, serve immediately with remaining dressing and feta.
