Spinach and Strawberry Salad

Instructions
- If using reduced balsamic, boil 1/3 cup of balsamic vinegar, then simmer until reduced to a few tablespoons and set aside to cool.
- In a mixing bowl, combine spinach, strawberry slices, and pecans, and toss well.
- In another bowl, whisk together balsamic vinegar, olive oil, honey, and salt.
- Transfer the salad to a serving plate, sprinkle with goat cheese, and drizzle the dressing on top.
- Finish with a generous sprinkle of freshly cracked black pepper and garnish with more strawberries if desired.
