Ingredients

  • 9 ounces lump crab meat
  • ½ cup panko crumbs
  • 1 large egg
  • 1 large egg white
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons chopped chives
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon Old Bay Seasoning
  • teaspoon paprika
  • few dashes tabasco (optional)
  • teaspoon kosher salt
  • to taste black pepper
  • as needed cooking spray
  • 4 lemon wedges (for serving)

Instructions

  1. Combine panko crumbs, egg, mayonnaise, Dijon mustard, chives, parsley, lemon juice, Old Bay seasoning, paprika, tabasco, salt, and pepper in a bowl.
  2. Mix well and gently fold in the crab meat without overmixing.
  3. Shape the mixture into 4 round, flattened patties, each about ½ cup.
  4. Preheat the waffle iron on high and spray it with cooking oil.
  5. Place one patty in the center of the waffle iron and close it gently.
  6. Cook for about 2 ½ to 3 minutes until the edges are golden.
  7. Serve the crab cakes with lemon wedges.
