Easy Low-Carb Orange Creamsicles

Ingredients

  • 1 can full fat coconut milk
  • ½ cup orange juice, freshly squeezed
  • ¼ cup lemon juice
  • teaspoons orange extract
  • ½ teaspoon vanilla stevia
  • 1 tablespoon sunflower lecithin powder

Instructions

  1. Blend coconut milk, orange juice, and lemon juice in a Vitamix.
  2. Add orange extract, stevia, and lecithin, then blend until smooth.
  3. Pour the mixture into popsicle molds.
  4. Set a timer for 30 minutes.
  5. Insert popsicle sticks into the semi-frozen popsicles.
  6. Freeze for 3 hours before serving.
