Easy Gingerbread Truffles

Ingredients

The truffle mixture

  • ½ cup almond flour
  • 3 tbsp coconut flour
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ½ cup almond butter
  • 2 tbsp honey
  • 2 tbsp molasses

The chocolate coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix the almond flour, coconut flour, ginger, cinnamon, and salt in a large bowl.
  2. In a small bowl, mix together the almond butter, honey, and molasses.
  3. Combine the wet and dry ingredients and stir until well mixed.
  4. Chill the dough for 30 minutes.
  5. Melt the chocolate chips with coconut oil in the microwave in 20-second increments, stirring in between.
  6. Once melted, roll the chilled dough into balls and coat them in the melted chocolate.
  7. Return the coated truffles to the refrigerator or freezer for at least 30 minutes before serving.
