Easy Gingerbread Truffles

The truffle mixture

The chocolate coating

Instructions
- Mix the almond flour, coconut flour, ginger, cinnamon, and salt in a large bowl.
- In a small bowl, mix together the almond butter, honey, and molasses.
- Combine the wet and dry ingredients and stir until well mixed.
- Chill the dough for 30 minutes.
- Melt the chocolate chips with coconut oil in the microwave in 20-second increments, stirring in between.
- Once melted, roll the chilled dough into balls and coat them in the melted chocolate.
- Return the coated truffles to the refrigerator or freezer for at least 30 minutes before serving.
