trimmed of excess fat

bacon, cooked and crumbled

artichoke hearts, drained and roughly chopped

roasted red peppers, thinly sliced

walnuts, toasted
Blue Cheese Dressing Ingredients
½
cup
plain Greek yogurt
½
cup
crumbled blue cheese

clove
garlic, finely minced

Tbsp.
red wine vinegar

Tbsp.
lemon juice
pinch
cayenne pepper
pinch
salt
pinch
black pepper
Instructions
1. Season the steak with salt and black pepper on both sides.
2. Heat oil in a skillet over medium-high heat and cook the steak for 5 minutes without moving it.
3. Flip the steak and cook for an additional 3 minutes for medium-rare, adjusting time for desired doneness.
4. Remove the steak and let it rest for at least 10 minutes before slicing it thinly.
5. In a large bowl, layer mixed greens, crumbled bacon, artichokes, roasted red peppers, and walnuts.
6. For the dressing, whisk together Greek yogurt, blue cheese, garlic, vinegar, lemon juice, and seasonings until blended.
7. Drizzle the dressing over the salad and serve.
