Instructions
- Combine olive oil, parsley, and crushed red pepper in a small bowl and marinate the steaks for 2-3 hours in the refrigerator.
- Make the dressing by blending olive oil, apple cider vinegar, sweetener, garlic, mustard, salt, and pepper until smooth and refrigerate.
- Allow the marinated steaks to rest at room temperature for 30 minutes before cooking.
- Preheat the oven to 400°F and heat a grill or grill pan to medium-high.
- Bake the bacon on a parchment-lined baking sheet for 15 minutes, flip, and bake until crisp.
- Grill the steaks for about 10-12 minutes to your desired doneness, flipping once.
- Toss spinach and shallots with the dressing in a large bowl, then serve topped with steak, bacon, and blue cheese.
