Hawaiian BBQ Chicken Wonton Cupcakes

Ingredients

The filling

  • 1 ⅔ cups cooked boneless skinless chicken breast, chopped or shredded
  • ½ cup chopped fresh pineapple
  • 4 tablespoons spicy barbecue sauce
  • 1 tablespoon chopped scallions

The wrappers and cheese

  • 16 pieces wonton wrappers
  • 1 cup reduced fat 2% shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F and lightly mist a muffin tin with cooking spray.
  2. In a medium bowl, mix the chicken, pineapple, scallions, and barbecue sauce until well combined.
  3. Place a wonton wrapper in the bottom of each muffin cup and fill with half of the chicken mixture.
  4. Sprinkle half of the cheddar cheese over the chicken mixture.
  5. Add another wonton wrapper on top and repeat the layering with the remaining ingredients.
  6. Bake for 18-20 minutes until golden brown, then let cool for 5 minutes before removing from the muffin tin.
