Hawaiian BBQ Chicken Wonton Cupcakes

Instructions
- Preheat the oven to 375°F and lightly mist a muffin tin with cooking spray.
- In a medium bowl, mix the chicken, pineapple, scallions, and barbecue sauce until well combined.
- Place a wonton wrapper in the bottom of each muffin cup and fill with half of the chicken mixture.
- Sprinkle half of the cheddar cheese over the chicken mixture.
- Add another wonton wrapper on top and repeat the layering with the remaining ingredients.
- Bake for 18-20 minutes until golden brown, then let cool for 5 minutes before removing from the muffin tin.
