Ingredients

The Crunchy Tofu

  • ¼ cup panko breadcrumbs
  • ¼ cup all purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 1 block extra firm tofu
  • ¼ cup grapeseed oil

The Wraps

  • 2 cups chopped romaine lettuce
  • ¼ cup thinly sliced red onion
  • 1 whole avocado
  • 2 tablespoons hemp hearts (optional)
  • ¼ cup green goddess dressing
  • 2 (11-inch) flour tortillas

Instructions

  1. Preheat the oven to 450°F and line a baking sheet.
  2. Mix panko breadcrumbs, flour, cornstarch, onion powder, garlic powder, and salt in a bowl.
  3. Tear the pressed tofu into bite-sized pieces and coat with the breadcrumb mixture and grapeseed oil.
  4. Transfer the tofu to the baking sheet and bake for 40 minutes until golden and crispy.
  5. In a bowl, toss together romaine lettuce, red onion, avocado, hemp hearts, and green goddess dressing.
  6. Place a tortilla on a flat surface, add half of the salad and half of the tofu, then fold and cut in half.
  7. Repeat with the second tortilla.
