Ingredients

Tofu Spread

  • 12.5 oz extra-firm tofu, cubed
  • 2 cloves garlic, chopped
  • ¼ cup vegan mayonnaise
  • 2 tbsp lemon juice
  • 2 tbsp Dijon mustard
  • 1 tsp herbamare or salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 2 green onions, sliced
  • ½ red pepper, coarsely chopped
  • ¼ cup chopped parsley

Wraps

  • 4 soft flour tortillas
  • ½ medium English cucumber, sliced paper thin
  • 6 radishes, sliced paper thin
  • ½ cup micro-greens or sprouts of your choice

Instructions

  1. Combine tofu, garlic, vegan mayo, lemon juice, Dijon mustard, herbamare, black pepper, and smoked paprika in a food processor and pulse until well combined but still textured.
  2. Add green onions, bell peppers, and parsley, pulsing a few times to incorporate.
  3. Use immediately or store in an airtight container in the refrigerator for up to a week.
  4. For each wrap, lay a tortilla on a board and spread about ¼ of the tofu spread on it.
  5. Top with cucumber slices, radish slices, and micro-greens or sprouts.
  6. Roll the wrap tightly, slice in half diagonally, and serve.
  7. Store any leftover wraps in an airtight container in the fridge for the next day.
