Instructions
- Combine tofu, garlic, vegan mayo, lemon juice, Dijon mustard, herbamare, black pepper, and smoked paprika in a food processor and pulse until well combined but still textured.
- Add green onions, bell peppers, and parsley, pulsing a few times to incorporate.
- Use immediately or store in an airtight container in the refrigerator for up to a week.
- For each wrap, lay a tortilla on a board and spread about ¼ of the tofu spread on it.
- Top with cucumber slices, radish slices, and micro-greens or sprouts.
- Roll the wrap tightly, slice in half diagonally, and serve.
- Store any leftover wraps in an airtight container in the fridge for the next day.
