Curried Tofu Papaya Wraps

Ingredients

The marinade

  • ½ cup canned light coconut milk
  • teaspoons Thai red curry paste
  • ½ teaspoon minced fresh ginger
  • 1 medium garlic clove, minced
  • ½ teaspoon turmeric
  • ½ teaspoon reduced sodium soy sauce
  • Pinch cayenne pepper

The filling

  • 1 (12-ounce) package extra firm tofu
  • 1 medium papaya, peeled and diced
  • ½ cup chopped green onions
  • ¼ cup chopped fresh cilantro
  • Pinch sea salt, optional

The wraps

  • 6 (9-inch) whole grain tortillas or wraps
  • 3 cups fresh watercress or baby salad greens

Instructions

  1. Mix the coconut milk, curry paste, ginger, garlic, turmeric, soy sauce, and cayenne in a bowl until smooth.
  2. Fold in the tofu, papaya, green onions, and cilantro. Season with sea salt if desired and refrigerate for 30 minutes.
  3. Place a tortilla on a cutting board and spread ½ cup of the tofu mixture down the center.
  4. Top with ½ cup of watercress.
  5. Fold the tortilla over the filling and wrap tightly, placing seam side down on a serving dish.
  6. Serve whole or slice into pinwheels for an appetizer.
