Curried Tofu Papaya Wraps

The filling

extra firm tofu

papaya, peeled and diced

The wraps

whole grain tortillas or wraps

fresh watercress or baby salad greens
Instructions
- Mix the coconut milk, curry paste, ginger, garlic, turmeric, soy sauce, and cayenne in a bowl until smooth.
- Fold in the tofu, papaya, green onions, and cilantro. Season with sea salt if desired and refrigerate for 30 minutes.
- Place a tortilla on a cutting board and spread ½ cup of the tofu mixture down the center.
- Top with ½ cup of watercress.
- Fold the tortilla over the filling and wrap tightly, placing seam side down on a serving dish.
- Serve whole or slice into pinwheels for an appetizer.
