Tofu and Brown Rice Lettuce Wraps

Ingredients

Lettuce Wraps

  • 1 block extra firm tofu
  • 2 cups cooked brown rice
  • 1 head butter lettuce or leaf lettuce
  • to taste spicy mayo
  • to taste chopped peanuts or crispy onions

SOS Peanut Sauce

  • ½ cup teriyaki sauce
  • 1 juice orange
  • ¼ cup peanut butter
  • to taste Sriracha or other chile sauce

Instructions

  1. Heat oil in a nonstick skillet over medium-high heat and crumble the tofu into the pan, cooking until slightly browned.
  2. While the tofu is cooking, whisk together the sauce ingredients in a bowl.
  3. Add the cooked brown rice and most of the sauce to the pan, sautéing for about 5 minutes until browned and caramelized.
  4. Season with salt to taste.
  5. Spoon the tofu and brown rice filling into lettuce leaves, topping with crunchy elements and spicy mayo, and drizzle with extra sauce.
