Tofu and Brown Rice Lettuce Wraps

Instructions
- Heat oil in a nonstick skillet over medium-high heat and crumble the tofu into the pan, cooking until slightly browned.
- While the tofu is cooking, whisk together the sauce ingredients in a bowl.
- Add the cooked brown rice and most of the sauce to the pan, sautéing for about 5 minutes until browned and caramelized.
- Season with salt to taste.
- Spoon the tofu and brown rice filling into lettuce leaves, topping with crunchy elements and spicy mayo, and drizzle with extra sauce.
