Ingredients

The filling

  • 14 oz extra firm tofu
  • ¼ tsp salt
  • 2 Tbsp cornstarch
  • 2 Tbsp cooking oil
  • ½ cup hoisin sauce
  • 2 pieces green onions
  • 1 piece carrot
  • ¼ cup peanuts
  • 1 cup cooked rice

The wraps

  • 1 head lettuce

Instructions

  1. Press the tofu between two plates with a weight on top for about 30 minutes to remove excess liquid.
  2. Chop the tofu into small pieces and coat with salt and cornstarch.
  3. Heat oil in a skillet and fry the tofu until golden brown and crispy, about 10 minutes.
  4. Add hoisin sauce to the tofu and stir to coat.
  5. Prepare the toppings by chopping peanuts, slicing green onions, and shredding the carrot.
  6. Assemble the lettuce cups by adding rice, hoisin tofu, green onions, carrots, and peanuts into each lettuce leaf.
