Crispy Miso Lime Tofu

Ingredients

The tofu and lettuce

  • 1 head butter lettuce
  • 1 block (14- to 16-ounce) extra firm tofu

The sauce

  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon white or yellow miso
  • 1 tablespoon rice vinegar
  • 2 tablespoons honey
  • ½ teaspoon ground ginger
  • ½ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • 3 tablespoons neutral oil or extra-virgin olive oil

Toppings (optional)

  • to taste sesame seeds
  • to taste sliced scallions
  • to taste fresh herbs (mint and cilantro)
  • to taste chopped peanuts or cashews

Limes

  • 2 limes

Instructions

  1. Wash and dry the butter lettuce leaves and cut the limes in half.
  2. In a bowl, mix the juice of 1 lime, soy sauce, water, miso, vinegar, honey, ginger, garlic powder, and red pepper flakes until smooth.
  3. Heat a skillet over medium-high heat and prepare the tofu by squeezing out excess liquid.
  4. Crumble the tofu and add it to the hot skillet, cooking undisturbed for 3 minutes before stirring.
  5. Continue cooking, stirring occasionally, until the tofu is crispy and golden brown, about 9 to 12 minutes.
  6. Add the sauce to the tofu and stir until absorbed, then turn off the heat.
  7. Serve the crispy tofu in lettuce leaves with optional toppings and squeeze lime juice over before eating.
