Ingredients

The filling

  • 14 oz firm tofu, pressed and crumbled
  • 1 tbsp nutritional yeast
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 4 oz shiitake mushrooms, thinly sliced
  • 3 cups torn kale, spinach, or chard leaves
  • to taste salt and pepper

The wraps

  • 6 medium whole wheat tortillas

Instructions

  1. 1. Combine tofu, nutritional yeast, turmeric, and garlic powder in a large bowl and set aside.
  2. 2. Heat olive oil in a large skillet over medium heat, add onion, and cook until softened.
  3. 3. Add mushrooms and cook for an additional 2 minutes.
  4. 4. Stir in greens and the tofu mixture, cooking until the greens have wilted.
  5. 5. Divide the filling onto each tortilla and fold them like burritos.
  6. 6. To freeze, wrap each burrito tightly in plastic wrap and place in a freezer bag.
  7. 7. To reheat, remove plastic wrap, loosely wrap in paper towel, and microwave until heated through.
