Ingredients

The main ingredients

  • 14–16 ounces tofu, firm or extra firm
  • 1–2 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon paprika
  • 1–3 teaspoons nutritional yeast
  • pinch cayenne pepper or Aleppo chili flakes

Optional ingredients

  • ¼ cup chopped green onions
  • 2 cups chopped veggies (e.g., onions, mushrooms, spinach)

Instructions

  1. Blot the tofu with a paper towel to remove excess moisture.
  2. Heat olive oil in a nonstick pan or cast-iron skillet.
  3. If using, sauté onions or veggies until tender-crisp, then set aside.
  4. Crumble the tofu into the pan and break it apart into small pieces.
  5. Sauté the tofu for 4-5 minutes without stirring, then season with salt, pepper, spices, and nutritional yeast.
  6. Stir and sauté for another 3-4 minutes.
  7. For a creamier texture, add a splash of plant-based milk.
  8. Add cooked veggies or spinach if desired, adjust seasoning, and garnish with green onions before serving.
