Tofu Scramble

Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 1 cup red bell pepper, chopped
  • ½ teaspoon fine sea salt
  • ½ teaspoon turmeric
  • ½ teaspoon ground cumin
  • 1 14 oz. block extra-firm tofu
  • 1 heaping cup fresh spinach (optional)
  • to taste black salt (kala namak, optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat and sauté onion, pepper, and ¼ teaspoon of salt until softened.
  2. While the veggies are cooking, drain the tofu (no need to press it).
  3. Add turmeric and cumin to the sautéed veggies and stir briefly.
  4. Crumble the tofu into the pan and season with another ½ teaspoon of salt, stirring well.
  5. Cook until the tofu is hot and any extra moisture has evaporated.
  6. Add fresh spinach and stir until wilted.
  7. Adjust seasoning to taste and serve warm.
