Tofu Scramble

block extra-firm tofu

fresh spinach (optional)

black salt (kala namak, optional)
Instructions
- Heat olive oil in a skillet over medium-high heat and sauté onion, pepper, and ¼ teaspoon of salt until softened.
- While the veggies are cooking, drain the tofu (no need to press it).
- Add turmeric and cumin to the sautéed veggies and stir briefly.
- Crumble the tofu into the pan and season with another ½ teaspoon of salt, stirring well.
- Cook until the tofu is hot and any extra moisture has evaporated.
- Add fresh spinach and stir until wilted.
- Adjust seasoning to taste and serve warm.
