Ingredients

The scramble

  • cup almond milk
  • 2 tablespoons nutritional yeast
  • 2 cloves garlic, minced
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon ground cumin
  • 1 tablespoon extra virgin olive oil
  • ½ cup diced yellow onion
  • 14 ounces extra-firm tofu, patted dry and crumbled
  • to taste sea salt
  • to taste freshly ground black pepper

  • Tomatoes
  • salsa or pico de gallo
  • Avocado
  • tomatillo salsa verde
  • Sautéed spinach or kale
  • Cilantro
  • Tortillas

Instructions

  1. Whisk together almond milk, nutritional yeast, garlic, mustard, turmeric, cumin, and salt in a small bowl, then set aside.
  2. Heat olive oil in a large skillet over medium heat, add onion and cook until soft.
  3. Stir in crumbled tofu and cook until heated through, about 3 to 5 minutes.
  4. Reduce heat to low, stir in the almond milk mixture, and cook for an additional 3 minutes, stirring occasionally.
  5. Season to taste with more salt and black pepper, then serve with desired toppings.
