Fluffy Tofu Scramble

Ingredients

The base

  • 2 teaspoons coconut oil
  • ½ medium red onion
  • 4 cloves garlic
  • 1 16 ounce block firm or extra firm tofu

The seasonings

  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 tablespoon nutritional yeast
  • ½ teaspoon dried Italian seasoning
  • ¾ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon black salt (kala namak, optional)

The liquid

  • 6 tablespoons unsweetened soy milk or almond milk

Instructions

  1. Heat the coconut oil in a pan over medium heat.
  2. Sauté the diced onion and minced garlic for about 5 minutes until fragrant and translucent.
  3. Crumble the pressed tofu into the pan using your hands.
  4. Mix the seasonings together in a bowl and sprinkle them over the tofu mixture.
  5. Stir to combine until the seasonings are fully incorporated, then reduce heat to low and add the milk, stirring to combine.
  6. Cook for about 5-8 minutes, stirring occasionally, and add more milk if desired.
  7. Taste and adjust seasonings if needed.
  8. Remove from heat, add kala namak if using, and stir to combine before serving.
