  • 1 pound extra-firm tofu
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, chopped
  • 1 onion, chopped
  • teaspoons curry powder
  • 2 tablespoons nutritional yeast (optional)
  • 3 big handfuls spinach leaves, stemmed
  • ½ teaspoon fine grain sea salt, plus more if needed

For Serving

  • chives
  • hot sauce (optional)

Instructions

  1. Drain and press the tofu to remove excess moisture, then crumble into small pieces.
  2. Heat oil in a skillet, add garlic and onion, and sauté until soft.
  3. Stir in curry powder and tofu, cover and cook for 4-5 minutes.
  4. Add nutritional yeast and spinach, stir until spinach wilts.
  5. Season with salt and adjust seasoning as needed.
