Ingredients

The scramble

  • 14 oz firm tofu
  • ¼ cup water
  • 1 tablespoon nutritional yeast
  • ½ teaspoon garlic powder
  • ¼ teaspoon turmeric
  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ small red onion, diced
  • ½ medium red bell pepper, diced
  • 2 cups packed spinach leaves

Toppings

  • 1 medium avocado, diced
  • to taste Everything Bagel Seasoning

Instructions

  1. Drain the tofu by breaking it into bite-size pieces and letting it sit on paper towels for 15 minutes.
  2. Mix the water, nutritional yeast, garlic powder, turmeric, salt, and pepper in a small bowl.
  3. Heat olive oil in a large skillet over high heat, then add the onion and red bell pepper, cooking until tender.
  4. Reduce heat to medium and add the spinach, cooking until wilted.
  5. Pat the tofu pieces dry and add them to the skillet, cooking for 2 minutes.
  6. Pour the seasoning mixture over the tofu and veggies, stirring gently to coat.
  7. Cook for an additional 5 minutes, stirring occasionally, and season with extra salt and pepper if desired.
  8. Serve warm, topped with avocado and Everything Bagel Seasoning.
