Scrambled Turmeric Tofu with Greens

Ingredients

The Scrambled Tofu

  • 3 oz extra firm tofu
  • 1 tsp nutritional yeast
  • ½ each green onion
  • 1 oz sliced mushrooms
  • c chopped greens
  • 2 tsp sun-dried tomatoes

The Toast

  • 1 slice whole grain toast
  • ¼ c blueberries

Beverages

  • 8 oz coffee
  • 1 c fortified soy milk

Instructions

  1. Press the tofu to remove excess moisture and crumble it into a bowl.
  2. In a skillet, sauté the green onions and sliced mushrooms until soft.
  3. Add the crumbled tofu, nutritional yeast, chopped greens, and sun-dried tomatoes to the skillet.
  4. Cook until heated through and the greens are wilted.
  5. Serve the scrambled tofu on whole grain toast topped with blueberries.
  6. Enjoy with coffee and fortified soy milk.
