Instructions
- Press the tofu to remove excess moisture and crumble it into a bowl.
- In a skillet, sauté the green onions and sliced mushrooms until soft.
- Add the crumbled tofu, nutritional yeast, chopped greens, and sun-dried tomatoes to the skillet.
- Cook until heated through and the greens are wilted.
- Serve the scrambled tofu on whole grain toast topped with blueberries.
- Enjoy with coffee and fortified soy milk.
