Instructions
- Heat olive oil in a skillet and crumble the tofu, cooking it with taco seasoning, chipotles, and salsa until browned.
- Blend cashew queso ingredients until smooth.
- On a tortilla, layer the tofu, cashew queso, crunchy elements, and fresh ingredients.
- Fold the edges of the tortilla towards the center and place it seam side down in a hot skillet.
- Cook until golden brown and crispy on both sides, then slice and serve.
