Ingredients

Spicy Sofritas Tofu

  • 3 tablespoons olive oil
  • 16 ounces extra firm tofu
  • 2 tablespoons taco seasoning
  • 2 pieces chipotle peppers, minced
  • ⅓ to ½ cup salsa

Cashew Queso

  • 1 cup cashews
  • ½ cup water
  • 1 can diced green chiles
  • 1 teaspoon taco seasoning

Crunchwraps

  • as needed pieces huge burrito-sized flour tortillas
  • as needed pieces tostadas or tortilla chips
  • as needed cups roasted vegetables
  • as needed cups black beans
  • as needed pieces avocados
  • as needed cups fresh stuff (tomatoes, cabbage slaw, lettuce, cilantro)
  • as needed cups salsa

Instructions

  1. Heat olive oil in a skillet and crumble the tofu, cooking it with taco seasoning, chipotles, and salsa until browned.
  2. Blend cashew queso ingredients until smooth.
  3. On a tortilla, layer the tofu, cashew queso, crunchy elements, and fresh ingredients.
  4. Fold the edges of the tortilla towards the center and place it seam side down in a hot skillet.
  5. Cook until golden brown and crispy on both sides, then slice and serve.
