Ingredients

The smoothie

  • ¼ cup cashews
  • 1 cup unsweetened plant milk
  • cup frozen strawberries
  • 1 whole frozen banana
  • ½ whole lemon (juiced)
  • 1 teaspoon vanilla extract

Toppings (optional)

  • 4 pieces gluten-free wafer cookies (crushed)
  • to taste rice milk or coconut milk whipped cream

Instructions

  1. Soak cashews in very hot water for 15 minutes, then rinse and drain.
  2. Combine plant milk, cashews, frozen strawberries, frozen banana, lemon juice, and vanilla extract in a blender.
  3. Blend on high for about 30 seconds until smooth and creamy.
  4. Serve immediately, optionally topping with whipped cream and crushed wafer cookies.
