Strawberry Cheesecake Milkshakes

Ingredients

The milkshake

  • 1 ½ cups vegan Tofutti vanilla ice cream
  • 3 ounces Tofutti Better Than Cream Cheese
  • ½ teaspoon vanilla extract
  • ½ cup almond milk or other alt-milk
  • ½ teaspoon grated lemon zest
  • 1 cup strawberries, hulled and quartered

The toppings

  • 1 tablespoon crushed vegan graham crackers
  • 1 can full-fat coconut milk
  • 1 pinch sugar or other sweetener
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Refrigerate the can of coconut milk overnight for whipped cream preparation.
  2. Chill a medium-sized bowl.
  3. Open the refrigerated can upside down, pour out the coconut water, and scoop the coconut cream into the chilled bowl.
  4. Whip the coconut cream until fluffy, adding a pinch of sugar and a dash of vanilla extract.
  5. Blend all milkshake ingredients except the graham cracker crumbs until smooth.
  6. Pour the milkshake into glasses and top with whipped coconut cream and crushed graham crackers.
