Ingredients

The pasta

  • 8 oz dry rotini pasta

The vegetables

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 1 rib celery, diced
  • 1 cup small broccoli florets
  • 8-10 stalks asparagus, trimmed and cut into 1" sections
  • ½ cup frozen green peas

The seasoning

  • 1-2 tbsp extra-virgin olive oil
  • 1 tbsp herbes de Provence
  • 1 tsp salt
  • 1 tsp ground black pepper
  • the juice of 1 lime
  • 3 tbsp extra-virgin olive oil

Optional garnish

  • Fresh Parmesan cheese shavings
  • Chopped fresh basil leaves

Instructions

  1. Cook the pasta in salted water according to package directions.
  2. Heat olive oil in a large sauté pan over medium heat.
  3. Add onions, garlic, carrot, celery, and salt; cook until softened.
  4. Add broccoli and asparagus; cook until vibrant green.
  5. Remove from heat, drain pasta, and add to the pan.
  6. Stir in frozen peas, lime juice, olive oil, herbes de Provence, and pepper.
  7. Mix well and serve immediately, garnished with Parmesan and basil.
