Instructions
- Prep the vegetables by washing and cutting them into equal-sized pieces.
- Boil salted water and cook the pasta according to package instructions, reserving some pasta water before draining.
- In a skillet, heat olive oil and sauté carrots and onion for 1-2 minutes.
- Add zucchini and yellow squash, cooking for another 1-2 minutes.
- Stir in garlic, grape tomatoes, and peas, seasoning with salt, pepper, and oregano, and sauté for an additional 1-2 minutes.
- Turn off the heat, add butter and lemon juice, and mix well.
- Combine the cooked pasta with the vegetable mixture and add Parmesan cheese and reserved pasta water to create a sauce.
- Serve with optional parsley garnish.
