Ingredients

The pasta

  • 8 oz penne pasta

The vegetables

  • 1 zucchini
  • 1 yellow squash
  • 1 carrot
  • ½ red onion
  • ½ cup frozen peas
  • 1 cup grape tomatoes
  • 3 cloves garlic, minced

The sauce

  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 2 Tbsp fresh lemon juice
  • ½ cup grated Parmesan

The seasonings

  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp freshly cracked black pepper

Instructions

  1. Prep the vegetables by washing and cutting them into equal-sized pieces.
  2. Boil salted water and cook the pasta according to package instructions, reserving some pasta water before draining.
  3. In a skillet, heat olive oil and sauté carrots and onion for 1-2 minutes.
  4. Add zucchini and yellow squash, cooking for another 1-2 minutes.
  5. Stir in garlic, grape tomatoes, and peas, seasoning with salt, pepper, and oregano, and sauté for an additional 1-2 minutes.
  6. Turn off the heat, add butter and lemon juice, and mix well.
  7. Combine the cooked pasta with the vegetable mixture and add Parmesan cheese and reserved pasta water to create a sauce.
  8. Serve with optional parsley garnish.
