Ingredients

The filling

  • 1 whole Rotisserie Chicken (Pre-Cooked)
  • 6 oz Black Beans
  • 1 cup Sweet Corn
  • 2 cups Shredded Cheddar Cheese
  • ½ cup Pico De Gallo

The wrappers

  • 4 or more Flour Tortillas

The egg wash

  • 1 large Organic Egg

The seasoning

  • 1 tsp Garlic Powder
  • ½ tsp Paprika
  • 1 tsp Black Pepper
  • ¼ tsp Sea Salt

For frying

  • 1 cup Cooking Oil

Instructions

  1. Shred the rotisserie chicken and set aside.
  2. In a pan, heat the black beans, sweet corn, and paprika until tender for 5 minutes.
  3. Lower the heat and add the remaining filling ingredients, cooking for an additional 10 minutes.
  4. Place a tablespoon of the mixture in the center of each tortilla and roll tightly.
  5. Scramble the egg and brush it over the tortillas.
  6. Heat oil in a separate pan and fry the rolls until browned on both sides.
  7. Remove from heat, cut diagonally, and serve with dipping sauce.
