Instructions
- Shred the rotisserie chicken and set aside.
- In a pan, heat the black beans, sweet corn, and paprika until tender for 5 minutes.
- Lower the heat and add the remaining filling ingredients, cooking for an additional 10 minutes.
- Place a tablespoon of the mixture in the center of each tortilla and roll tightly.
- Scramble the egg and brush it over the tortillas.
- Heat oil in a separate pan and fry the rolls until browned on both sides.
- Remove from heat, cut diagonally, and serve with dipping sauce.
