Instructions
- Heat 2 teaspoons of oil in a skillet and add the chicken, cooking until browned on all sides, then transfer to a plate.
- In the same skillet, heat the remaining oil and add the onion, garlic, and bell pepper, cooking until the onion is translucent.
- Add the coleslaw mix, spinach, black beans, corn, soy sauce, and seasonings, cooking until the coleslaw is softened.
- Return the chicken to the skillet and mix well, then squeeze the juice of half a lime over the mixture and toss.
- Blend the ranch dressing with the avocado and drizzle over the bowls.
- Top with sliced avocado, tortilla strips, and jalapeños if desired, and serve with additional lime juice.
