Ingredients

The main ingredients

  • 1 pound chicken breast, cut into very small pieces
  • 4 teaspoons oil, divided
  • 4 pieces green onions, sliced thinly
  • 2 cloves garlic, minced
  • 1 bag coleslaw mix
  • ½ teaspoon cumin
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes, optional
  • 2 tablespoons soy sauce
  • 1 cup black beans
  • 1 cup corn kernels
  • 2 cups spinach, chopped
  • 1 red bell pepper, chopped
  • 1 lime, halved

Garnishes

  • 1 avocado, sliced
  • ½ cup ranch dressing
  • ¼ avocado, peeled and pitted
  • tortilla strips as needed for topping
  • cilantro, chopped as needed for topping

Instructions

  1. Heat 2 teaspoons of oil in a skillet and add the chicken, cooking until browned on all sides, then transfer to a plate.
  2. In the same skillet, heat the remaining oil and add the onion, garlic, and bell pepper, cooking until the onion is translucent.
  3. Add the coleslaw mix, spinach, black beans, corn, soy sauce, and seasonings, cooking until the coleslaw is softened.
  4. Return the chicken to the skillet and mix well, then squeeze the juice of half a lime over the mixture and toss.
  5. Blend the ranch dressing with the avocado and drizzle over the bowls.
  6. Top with sliced avocado, tortilla strips, and jalapeños if desired, and serve with additional lime juice.
