Ingredients

The sauce

  • ¼ cup coconut aminos
  • ¼ cup chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp fish sauce
  • ½ tsp red pepper flakes
  • ½ tsp ground ginger

The bowl

  • 1 shallot, diced
  • 3 cloves garlic, minced
  • 8 cups coleslaw mix + cruciferous salad mix
  • 4 green onions, chopped
  • 1 tbsp sesame oil
  • 1 lb ground pork
  • Salt and pepper to taste
  • Sesame seeds (optional topping)

Instructions

  1. Mix all sauce ingredients in a bowl and set aside.
  2. Chop the shallot, garlic, and green onions.
  3. Heat a large skillet over medium-high heat and add sesame oil.
  4. Sauté shallot and garlic for 2 minutes.
  5. Add ground pork, breaking it into bits and seasoning with salt and pepper. Cook until browned.
  6. Add coleslaw and cruciferous veggie mix along with green onions. Cook for 5-6 minutes until veggies soften.
  7. Turn heat to low and add the sauce, mixing well. Cook until cabbage is cooked to your liking.
  8. Remove from heat and serve, topping with sesame seeds if desired.
